Sun-dried Tomato Hummus

Sun-dried Tomato Hummus

1 can chickpeas, drained...liquid reserved
5-6 tbsp lemon juice
2 tbsp tahini
1 1/2 tsp minced garlic
1/2 tsp salt
1/4 cup water
2-3 tbsp sliced sun-dried tomatoes marinated in oil
1 tbsp olive oil
paprika

1. Add chickpeas, lemon juice, tahini, garlic, salt, water, and sun-dried tomatoes to a food processor.  Mix until smooth.  Add some reserved liquid if it seems too dry.  

2. Drizzle with olive oil and sprinkle paprika on top...serve with warm pita (my son eats it with blue corn chips..also tasty).
