Stir-fry Asparagus

Stir-fry Asparagus

I love asparagus.  It's great in many things, but I love it stir-fried the best.  I learned a nice trick a few years ago to getting the tough parts of the asparagus off.  I used to cut the ends off and just hope I got all the tough parts.  Unfortunately, it didn't always work and there would sometimes be some chewy pieces.  The key to making sure you get the tough parts off is snapping.  Take each piece of asparagus and simply snap it.  The asparagus will naturally break off at the perfect place and leave you with the crisp, delicious parts that cook nicely.

1 bunch of asparagus, sliced
1/4 tsp soy sauce
1/2 - 1 tbsp oyster sauce
1/4 - 1/3 cup water

1. In a wok on med.-high heat, add asparagus, soy sauce, and oyster sauce

2. Stir fry for a couple minutes, coating asparagus with sauce

3. Add 1/4 cup of water, stirring frequently.  Cook to desired tenderness.  Add more water as needed.
