Corn Casserole |
I got this recipe from my mom years ago, and I think she got it from one of my aunts. It's nice and moist and so simple to make. When I take this dish places, I almost always end up taking home an empty dish. I generally don't like corn bread or muffins because I don't like the grittiness of the corn meal. This dish, however, doesn't have any of that. I am currently also working on a gluten-free version of this. Wish me luck!
1 box Jiffy brand corn muffin mix
1 can creamed corn
1 can sweet corn
1 stick butter, melted
1 egg
1. Preheat oven to 350F.
2. In a medium to large casserole dish, add all ingredients and mix well until there are no Jiffy mix lumps.
3. Bake in oven, uncovered for 1 hour or until a toothpick inserted in the middle comes out clean.
