Spaghetti with meat sauce

Spaghetti w/ meat sauce
When my mom and I first moved to the United States, she knew nothing about cooking anything but Japanese food.  She said back in the 70's there were not a lot of options as far as fresh veggies and other ingredients went so she worked with what she could find.  This is one of those creations.  It's simple and easy and also tastes good. I have changed it a little to  my own tastes but for the most part it is my mother's recipe.  For my son, I use gluten-free rice pasta, but for the rest of us, we get whatever regular pasta I have.  Only my son gets the expensive stuff. :)

1.5-2lbs. ground turkey
1 green pepper, chopped
1 yellow onion, chopped
1 large package of button mushrooms, sliced
10-15 sun dried tomato slices (i use the kind that are jarred in oil..they are juicier)
1 envelope of italian style spaghetti sauce mix
1 jar of spaghetti sauce..I use Barilla, but use whichever you prefer..my mom used Ragu
1/3 spaghetti jar full of water

1. In a large pan brown the ground turkey

2. Add green peppers and onions..saute until they start to get soft..then add mushrooms...continue to saute until mushrooms start to get soft

3. Add envelope of spaghetti sauce mix...stir until veggies and meat are coated

4. Add jar of spaghetti sauce... fill jar about 1/3 of way with water..replace lid and shake to get all the extra sauce..then add to sauce

5. Simmer until veggies are cooked through.  Add sun dried tomatoes and heat through.

6. Serve over your favorite pasta.
