Gluten-free flour mixture

I realized I posted a recipe that called for gluten-free flour mixture but never told you what that mixture was.  So here it is... It is quite easy... Of course, you can use any mixture you want..this is just what I use.  Although I feel it is best to use a mixture when baking gluten-free and most other sites/recipe books say the same. It gives you a more authentic taste and consistency.  If you want to change any of my gluten-free recipes, just use regular flour instead of the gluten-free mixture and omit the xanthum gum.  


44 oz. bag Bob's Red Mill gluten-free all purpose flour mixture
22 oz. bag Bob's Red Mill gluten-free rice flour


In a large freezer bag add rice flour and 3/4 bag of all purpose flour.  Close bag and shake very well to make sure the flours blend together.  I just keep mine in the bag mainly because I currently don't have an airtight container big enough to hold the flour mixture.
