Spiced Potatoes

Spiced Potatoes

My husband and I made this dish out of the leftover spiced chicken and tomato yogurt sauce.  It tasted great with the Indian bread and leftover cucumber raita we had.  You could easily use some chicken broth, yogurt, tomatoes, and spices to make the sauce if you want to try it without having to make the whole chicken.  

1 large potato, peeled and cut into large chunks
1 sweet potato/yam of equal size, peeled and cut into large chunks
1 1/2 - 2 cups Tomato Yogurt Sauce
1 cup cut up leftover Spiced Roasted Chicken or cooked chicken
About 1 roasted shallot, chopped 

1. Boil potatoes.  Drain and return to pan and mash. 

2. Over medium-low heat, add Tomato Yogurt Sauce.  Add chicken and shallots.  Mix and heat through. 

* Serve with Cucumber Raita and Indian bread
