Applesauce Muffins (Gluten-free)

Applesauce Muffins (gluten-free)

Another tasty breakfast treat that is gluten-free.  These muffins are nice and moist and quite nice with a cup of hot, spiced chai.  Hope you enjoy them.

2 cups gluten-free flour mixture
1/2 cup butter (1 stick) softened at room temperature
3/4 cup sugar
1 egg
1 cup unsweetened applesauce
1 tsp baking soda
3/4 tsp xanthum gum
1 1/2 tsp cinnamon
1 tsp allspice
1/2 tsp ground cloves
1/2 tsp salt
1 cup raisins

1. Preheat oven to 375F.  Cream the butter and sugar in a large mixing bowl.  

2. Add the egg and beat well.  Add applesauce and spices.

3. In a separate mixing bowl, mix together the flour, baking soda, xanthum gum, and salt

4. Add the flour mixture to the wet mixture and blend well.  Fold in raisins.  

5. Fill 12 muffin cups w/ the mixture and bake for 25-30 minutes or until a toothpick comes out clean.

6. Cool on a wire rack and sprinkle tops with powdered sugar while still warm if desired.
