Chocolate-Oatmeal Cookies (Gluten-free)

Chocolate-Oatmeal Cookies (Gluten-free)

This is my second attempt at gluten-free cookies.  The first attempt was a disaster and hilarious.  I posted it earlier.  These were very tasty...I even fed them to guests and they went back for more without ever knowing they were gluten-free.  


1 3/4 cups gluten-free flour mixture
1 tsp baking soda
1/2 tsp salt
1/2 tsp xanthum gum
1 1/4 cup packed brown sugar
2 sticks butter, softened
1/4 cup granulated sugar
2 eggs
2 tbsp. rice milk
2tsp vanilla extract
2 1/2 cups oats (i used quick cooking, but you can use any)
1 bag semi-sweet chocolate chips 


1. preheat oven to 375F


2. In a small bowl, add gluten-free flour, baking soda, salt, and xanthum gum.


3. In a large bowl, beat brown sugar, sugar, and butter until creamy


4. Beat in eggs, milk, and vanilla extract.


5. Gradually add the flour mixture.


6. Stir in oats and chocolate chips.


7. Drop by rounded spoonfuls onto an ungreased cookie sheet


8. Bake 9-10 minutes for softer cookies and 12-13 for crispier cookies and cool on baking sheets for about 1 minute then transfer to wire racks.
