Chocolate Muffins (Gluten-free)

Chocolate Muffins

Yesterday was my hubby's birthday, and I didn't feel like making a cake. Instead, I made these yummy chocolate muffins.  They are nice and moist and not overly sweet. I adapted the recipe from www.yasalamcooking.com

1 1/4 cups gluten-free flour mixture
3/4 cup sugar
1/4 cup unsweetened baking cocoa
3/4 tsp. xanthum gum
1/2 tsp. baking powder
1/2 tsp. baking soda
pinch of salt
1/2 cup butter, melted
3 eggs
1/2 cup buttermilk substitute or buttermilk
1/2 tsp. vanilla extract
mini chocolate chips

1. Preheat oven to 350F. 

2. In a mixing bowl, add flour mixture, sugar, cocoa, xanthum gum, baking powder, baking soda, and salt. Mix to combine everything.

3. Add butter, eggs, buttermilk substitute, and vanilla.  Mix until well blended.

4. Put 12 paper cupcake liners in muffin pan.  Add cupcake mixture evenly to each liner. 

5. Bake 25 minutes or until wooden toothpick inserted in center comes out clean.  Allow cupcakes to cool completely..then ice w/ preferred frosting. Add mini chocolate chips to tops. 

Buttermilk substitute:
2-3 tbsp. cream of tartar
enough soy milk to make one cup

Let stand for at least 10 minutes
